Fussy eaters? Try this recipe. Potato & Onion Frittata

Well happy 2019!  We’ve had a beautiful break with my family but now it’s back into it.  School. Work. Washing. Routine.  Yes finally routine!  My kids thrive on routine and actually so do I!

With routine comes dinners that are easy to cook on a busy week.  So here’s one I prepared for my kids that my mum made for my sisters and I.  It’s delicious and fussy eaters are sure to love it!

Potato and Onion Frittata.

3 medium sized potatoes
1 onion
5 eggs
2 tablespoons parmesan cheese
salt & pepper

Method

Heat 2 tablespoons olive oil in a large fry pan and cook the potatoes and onion on low.  Stir often so they don’t burn. Season with salt and pepper. Keep stirring until potatoes are soft.

Meanwhile, in a large bowl, add the eggs & parmesan cheese and whisk together.

Once potatoes are cooked, add the egg mixture and swirl so it’s even in the pan.  Allow the bottom of the frittata to brown.

Once browned, grab a plate and flip the frittata on the plate then sliding the uncooked side back into the pan.

Serve with a salad.

This recipe is a winner in our home and is one that can be eaten the next day for lunch.  Let me know how you liked it!
